The Provo Tabernacle

It seems strange to mourn the loss of a building, but in this case there are many who do. I am certainly one of them. When I heard the news that a fire had destroyed the Provo Tabernacle in just a few short hours, and indeed was still burning strong, I was shocked and heartbroken. The loss of that beautiful pioneer building is immeasurable. If I, who only lived in Provo a few years, could grow so attached to that wonderful piece of history, I can only imagine the loss to those whose connection to it was much deeper.

I first went inside the Provo Tabernacle to hear a BYU Choral Festival during my freshman year. I fell in love with it immediately - the organ, the acoustics, the staircases, the woodwork, the lights, the colors - all of it. Three years later it was finally my turn to perform there as a member of the BYU Womens Chorus. I loved performing there. It was so picturesque, and seemed a much more intimate venue than our own concert hall on campus. Not to mention the way the building enhanced our beautiful sound. I looked forward to performing there every time. The last time I performed there with the womens chorus, Craig Jessop was our guest conductor. I'll never forget the feeling as he led us in singing "You'll Never Walk Alone."

Besides performing and hearing concerts there, the Provo Tabernacle was also home to many of my stake conferences. Sometimes I wondered if our stake conferences might be held in the tabernacle to encourage more of us to come. My last stake conference there I sang in the choir, and Elder Ballard was our visiting Gerneral Authority. It was the Saturday evening session, and of course he spoke about marriage in a singles stake. My future husband was sitting on one of the side benches, and I had a good view of him the whole meeting from the choir seats. I fully intended on finding him afterwards to offer him a ride home, but he pretty much bolted as soon as the meeting was over.

My memories are only an infinitesimal part of what gave that beautiful structure its soul. There are probably hundreds of thousands, perhaps millions of hearts with mine, that mourn the loss of a building this week.

Friday #17

I was super excited to see the 191 on the scale again this week! Woohoo! I'm not getting my hopes up for next week though... seeing as Friday next week is Christmas Eve. Now, I'm certainly not going to gorge myself for the holidays. I'm actually not sure if the new and improving me is capable of that. Ok, anyone can gorge themselves, but my tummy starts hurting after eating about half of what I used to feel ok about. Last Saturday I discovered that eating one old fashioned donut makes me sick - too much sugar. I hate to admit that I used to eat 3. Not often, but sometimes. Just another sign that I'm doing something right. Maybe next time I'll choose to avoid the free donut after choir practice. But as far as the holidays go, the food is just part of the enjoyment of family togetherness. I'm certainly not going to pass that up, but I think I know myself better this year than I ever have.

Zumba is still going well. I think maybe... just maybe.... I might have a little rhythm in me. Maybe it's just that the instructor is catering to all the other ladies in the class... who are on average about 40 years older than I am. That means I actually stand a chance of getting it right. I've always been pretty hopeless as a student of any kind of dance.

I'll leave you with another sign that I'm doing something right... I dragged my husband along window shopping and promised we could go get dinner afterwards. He took this picture with my phone, so it's not that great, but you get the idea. No, I didn't buy the dress, but I was sorely tempted. I've come a long way to even think about trying it on.

Friday #16

Well, it's been a month now since I lost any weight. That's a little disappointing, but looking back on the crazy schedule of that month, and seeing how I haven't gained weight either, I'm not too discouraged. 192. I guess my goal of reaching 180 before Christmas is a little unrealistic at this point, but that's ok. I'm still working hard.

I made it to Curves every day this week. I even went to the beginning Zumba class on Monday morning, and liked it so much that I went back for Zumba time on Wednesday. I was surprised how much I liked it. To be completely honest, I was surprised how much breath I still had after "dancing" for practically half an hour straight. Yes, we danced 1 minute, and did 1 minute on the machines, but that's hardly any kind of a break. I remember taking the World Dance class right before I graduated... I thought I was going to die after 10 minutes. I've come a long way since then.

Another Curves milestone... today was my 100th workout! I even got to wear the Curves 100 t-shirt today, since I received one yesterday. I'm not sure if I knew at the beginning whether I would stick to it this time. Probably I'm a little more motivated since I'm the one paying for it. But I'm not just sticking to it. I'm LOVING it. I'm learning so much about myself and about getting healthy and staying healthy. And I really do feel great!

Christmas blogging

I am seriously having the hardest time finding a Christmas background to stick with. Maybe you've noticed. I LOVED my fall background. But I can't find a Christmas one that I LOVE. My Christmas style is definitely cute, but not bold. It's... reverent, I guess. There are some that I love the edges a lot, but I want a different color in the middle, not white or beige or cream, or whatever it is. It works better with this one, and I like it, so we'll see if it sticks.  I shouldn't complain though, since I'll never be one of those people who can just go make a blog background because I couldn't find one I liked. That kind of thing just doesn't even make sense to me, so hats off to those who do make them.

Stephen and I got home last night from a fabulous weekend up north. Cold, but still lots of fun. Also, I had completely forgotten about the gross "inversion" that mucks up the air in the entire valley. We don't have that here, and I'm not looking forward to living with it again. But it was so fun to go to the wedding and spend time with some of the people Stephen grew up around for once. He talks about Grantsville all the time, but since his parents don't live there anymore we haven't had any reason to go. We were close on Thursday night, but still didn't quite make it to Grantsville. Friday I spent some quality time on campus, got to hear Singers rehearsal, and ran into a couple friends. Saturday was the concert, which I LOVED as always. The women's chorus even sang a song I sang with them a couple years ago. I could have dressed up and snuck on stage and no one would notice! I always threaten to do it, but I'm not quite that brave. lol. Besides, I get so much enjoyment out of watching the performance that I almost don't mind how much I miss it.

Friday #14 and 15. With before and after pictures! (well, lets call them in between pictures)

Yes, I know what day it is. It's a late Friday#14 and an early #15 because last friday was the day after Thanksgiving, and this friday I'll be up north. Today I weigh 192. These 190s are taking forever to kick. Last month felt kind of crazy with going out of town a couple times and babysitting and working during the day. I only made it to Curves 9 times in November. But not because of laziness. This month I hope I'm back on track mostly, but like I said, I am going out of town again tomorrow. And for Christmas.

For fun, I decided to finally add some pictures like I've been saying I would. The "before" picture was taken during Thanksgiving 2009, the "after" or "in between" picture was taken last week, Thanksgiving 2010. It was kind of shocking for me to see the difference. I don't always see that much of a change in myself, but it's definitely there.

Thankful

This is the post I meant to write on Thanksgiving. It was pretty much the whole point of all the other days of writing what I was thankful for, so even though I missed writing on thanksgiving I think it's worth sharing now.

I have so much to be thankful for. Those 20 or so posts don't really even scratch the surface. If I made a list, it would go on into eternity. Mostly I am thankful that my Heavenly Father gave me earthly parents, earthly friends, and earthly experiences. That pretty much covers the here and now. And I'm thankful that I know the One to thank. Because if I didn't, I would still be thankful, but what would be the point? What a great blessing it is in these times to know why I am here and who sent me. That knowledge gives me peace and strength every day.

I spent Thanksgiving with a wonderful family, and we all shared with each other what we were thankful for. I do miss my family on Thanksgiving, but I also don't feel as far away from them on that day as on some others. I know what they are doing and who they are with, and I'm doing pretty much the same thing. I get to call them and join in the party a little. This was my 7th Thanksgiving in a row that I didn't get to spend at my grandparents house. If I'm not there next year (and I probably won't be) that will make one third of my Thanksgivings that I wasn't there. But that's what I think of when anyone asks if I'll be "home" for Thanksgiving.

I love holidays for the memories. I count memories a great gift in my life. I used to be better at recording them, and I should work on keeping that up. I remember well the year I was twelve. We all gathered at my grandparents house in McLean as usual. Grandpas's siblings and many of their children were there too. My great grandmother Ruth gathered us all in the kitchen to inform us that she would not be with us next Thanksgiving. Aunt Melanie laughed, as did many of us, because she always said things like that, and we'd come to accept it as her wishful thinking. She was almost 92. But this time was different, to me at least. She told us to stick together and always be there for each other. She told us to stay close to the gospel. She died the next year on November 19th, six days before Thanksgiving. I don't remember anything about that next Thanksgiving, because I remember her funeral instead. I know thanksgiving was probably the same as always that year, though perhaps we were all a little more thoughtful. I know that sounds like a sad memory, but it's not really. It's just one more thing to remind me how grateful I am that my family is forever. That's what thanksgiving is all about to me.

San Diego

I know I missed a couple days, but I'm on vacation! I'm thankful for San Diego. It seems like a pretty happening place. Definitely fun for vacationing. It's kind of cold, which we were not quite prepared for, but other than that we're having a blast! I did get to go to the beach this morning, but it was cold. I'm pretty sure the water was warmer than the air. Yesterday we went to Balboa Park with the McBrides and Stephen and Jenny took turns with cameras taking pictures of the other couple. We got some really nice ones. I'm a fan of traveling with photographers. We had some great Mexican food outside in Old Town last night before it started raining. Also, as we were driving into the temple yesterday, I saw some sister missionaries, and one of them was my friend Rachel! We went to the Mormon Battalion visitor's center later, and she was able to give us the tour. So fun.

In other news, I'm also thankful for oatmeal cake. Which I'm making right now. A little late birthday dessert to share :) MMMMMMMmmm.

Birthdays!

I love birthdays. I feel loved every day, of course, but birthdays are just extra special. I especially like when my birthday falls on a sunday, because that always means I get to see a lot of friends at church. I seem to remember my sunday birthdays well. The last time my birthday was on a sunday was my freshman year. I spent the weekend with my friends, the Sandersons, and had a blast! The time before that that my birthday fell on a Sunday I turned 13. My great grandma had died two days before, and her viewing was at her house on my birthday. I know that sounds kind of sad, but my whole family was there (and then some) and I guess I just think of it as memorable.

This morning I got up early to get ready. Stephen did the dishes for me and made waffles for breakfast. He got me a few great presents (including socks, which is good for both of us since he's always wearing the few I have and I can't ever find them). I made cupcakes to take to the nursery kids. Holy cow, what a mess. But they liked them. The choir sang in church, and practiced Christmas music afterwards. I got back on facebook after 33 days, and there was lots of birthday love. I talked to my family and a few best friends. I watched the end of Oceans with my husband. Not an extraordinary day, but still an awesome one. And to top it all off, we leave for California tomorrow!

Not working next Friday!

So Tuesday I was pretty bummed when my boss said he needed me next Friday. Hello... I'm going on vacation! It's not my weekend! Luckily, I found out today that he doesn't need me on Friday, only Saturday! So I get to stay in California an extra day, and not spend Thanksgiving on the road! Woohoo! So I'm thankful for mis-information that turns out in my favor. And I'm so excited for California! The McBrides are already on their way.

Also, today I had a package for a certain house that I seem to get packages for often. The lady opened the door and told me I was her very favorite mail delivery person :) I guess it's just my winning smile at work again. There's not much more to endear me to anyone when I'm delivering packages.

Friday #13 and the Jacobsens!

Normally I would have written two blogs today, but I'm exhausted! So, first is the Friday Report.

191.0! It always feels good to see success. I feel like I've eaten pretty well this week, which is good considering I haven't been to Curves much. Babysitting team JJ is kind of an all day thing when it happens. But that does keep me moving, now that we have the stroller. My husband brought home some oranges the other day, so I've been able to have those with my breakfast. I LOVE oranges.

What I'm thankful for today is that the Jacobsens have returned! They are the snowbirds across the street; the first people we met here, and we love them. I saw their car when I got home from babysitting, and Stephen and I went right over to see them. We've been waiting for them for weeks! They were so glad to see we were still here. As soon as I walked in they both commented on how great I look, and I must have kept up all that walking. I was wearing my coat and everything. I mentioned that I had been going to Curves, and Afton seemed to like that idea. Maybe she'll join too! Anyway, we got all caught up on each other and it was so great to visit with them again. I'm so glad they're home.

The Playground

Obviously it would just be awkward for me to go to a playground by myself these days. With my husband and his camera I can almost get away with it. I've been babysitting these little boys though. We'll call them team JJ. They kind of watch TV a lot, and since they are only 2 and 3, their taste in TV definitely doesn't mesh with mine. That's not to say I don't put up with it, but I just can't do it all day. I let them watch what they want when their mom leaves for a bit. During naptime they put on a real movie (we're talking the Lion King instead of Teletubbies) and they sleep on the couches. Today their brother and sister in 3rd and 4th grade got home early, and made too much noise. Team JJ probably would have slept another hour. Oh well. But it was ok today because they finally got a new stroller, so I took all four kids on a walk to the closest playground I know of. It's only like half a mile, maybe a little more, but that's far for a kid I guess. There were a ton of kids there, but luckily we even got a turn on the swings. The playground is my new best friend. They all had a blast, and before I knew it their mom texted me to say she was almost home. We walked home by way of the Temple, which they loved. I felt like Louisa in the Sound of Music when she asks Maria "Can we do this every day?" Maybe walking all the way to the park with 4 kids would get old fast, but we could probably do it at least twice a week. Maybe tomorrow I'll take them to the Library. I haven't found their books at home yet.

Two different people walking by us commented on what a beautiful family I had. Really? With four kids? I'm turning 24 on Sunday. I really don't think I look old enough to have four kids. Maybe with just team JJ I could believe the misunderstanding. Haha.

News from Russia

I love Wednesdays. Why? Because that's when the emails from Russia come :) I LOVE reading Rebecca's weekly emails about her mission. And today I was even more excited because she wrote that she got my package. I sent her a scarf for her birthday, and I'm pretty impressed that it found its way into her hands before Christmas. She even sent a picture where she has it on. I love hearing about her companions, her wards, her investigators, her adventures, even the weather. I'm so glad she's a writer. It makes Russia seem not so far away.

The McBrides

Stephen and I are so blessed to have such awesome friends here. The McBrides are some of the best friends a newlywed couple could ask for :) We hang out with them all the time. We cook for them, they cook for us (sometimes) we go see movies together, they save our bench in Sacrament Meeting. Of course, the only reason they save our spot is because Jenny likes to hear me sing. We do favors for each other - like tonight I'm taking over the Young Women activity because all the other leaders who usually are available on Tuesdays are at a special fireside for Priests and Laurels. Go figure. But we're having the activity at the McBrides house even though they won't be there. And next week the four of us are going to California together! I'm stoked. I've never been to San Diego, but I sure always wanted to! And the beach! I love the beach! I might even be almost kinda cute in my swimming suit this time. Lol. Anyway, here's to the McBrides! I'm so thankful we are friends.

BYU

I'm thankful for BYU. I should probably stop right there because it will be difficult to elaborate in a short blog, but I can try. I've always known I was going to BYU. There was never really a question, except maybe when I saw my score the first time I took the ACT... yikes. But I took it again, and all was well. I didn't even apply to any other schools. I was scared like any other freshman on their own for the first time, but even then I was so excited to finally be where I had spent my whole life planning to be. The whole experience had it's ups and downs, but mostly ups. I tell the "down" stories because they make the "up" stories a million times better. I struggled, I worked hard, I had a few unwilling all-nighters. I was disappointed, and even heartbroken many times. But holy cow, I found some of the best friends anyone could ask for, including my eternal best friend. I finally got to sing in what has to be one of the best choirs this WORLD has to offer. Not only on campus, but in Nauvoo, and Jerusalem I was taught and befriended by some of the most brilliant minds in the world. I get to claim Nauvoo and Jerusalem as places I LIVED once, not just visited. I took classes that inspired and changed me. I got to sit at the feet of Prophets and Apostles in devotionals and firesides. I got to really know myself, and change myself. I would have done that anyway, but I'm so glad I got to do it at BYU! The whole experience was so much more than a degree.

As a side note... I'm also grateful for BYU's automatic undergraduate re-acceptance policy. More on that later :)

Cinnamon Rolls - of the home baked variety

My husband decided this morning that he really wanted cinnamon rolls. I was reluctant at first, because I know how long it takes to make them. Most of that time is waiting, but if the dough is ready by 6pm, I have to wait until at least 9:30 before I get to eat a cinnamon roll. There was no way I was going to get it done before church, but by the time church was over Stephen had successfully convinced me that this was a good idea. And he was right. Cinnamon rolls are the ultimate comfort food... warm, gooey, sweet, and familiar. Another recipe that has been passed down in my family. This one is Aunt Teresa's but she must have gotten it from somewhere else too. Mom makes a batch of cinnamon rolls whenever she makes that particular roll recipe. Rebecca and I often stayed up way past our bedtime the day before Thanksgiving to "help" mom make them. I think we mostly just watched.

Smiths

Today I went to the grocery store. Exciting, I know. But today was a more fun trip because my awesome husband agreed to come with me. And I didn't have to get a TON of groceries, just a few so that I knew I could  make dinners this week. But what I'm thankful for is that this week I got my quarterly grocery coupons in the mail. A $13 certificate because I earned 1300 points, and a bunch of other little coupons chosen for me according to what I buy. That mean that todays shopping trip was a successful saving trip. I spent $62, I saved $38. That's more than half of what I spent. Pretty cool I think. And I stocked up on a few things that will last me a while. I sure do love to cook, so naturally I'm thankful for the grocery store, and for saving when I can!

Friday #12 - yes, late again.

I have one word... vacation. Not an excuse, but more of a pause in progress. I only got to Curves on Monday, because Tuesday I was pretty sick. You have to be able to breathe to work out :) Next week I'll be babysitting a lot, so I might not have time to walk to Curves, but I'll still go for sure. I won't make it to 100 workouts before my birthday, but I will before the end of the month, so I'll be close. The number today is back to 194, but I gained it quick, so I'll lose it quick too. I may even make it to 190 by my birthday next Sunday, which is halfway to my Christmas goal. I can't believe it's so close!

As a side note... I think I might be brave enough to get my hair cut today, or sometime this week, so I'll post a couple pictures :)

The Gibsons

"The Gibsons" are my mom's family. Technically, none of her three sisters are Gibsons anymore, but the four of them together will always be the Gibson girls. Wednesday, yesterday, and today I've enjoyed being with all of them, and it's always a riot. Today we took Aunt Rae to lunch for her birthday, and Uncle David and Aunt Teresa (who are Gibsons) came as well. It was sooo much fun! Uncle David tells the best stories. It's such an interesting phenomenon to see siblings together, no matter how old they are. No matter how they've changed, siblings kind of revert back to their old family roles when they get together.

I didn't get to spend much time with my Gibson relatives when I was a kid. Most of my cousins are much older than I am, but they are all so cool! And their kids are adorable. I love when I do get to see them. This week I did, and it was especially fun to have my mom in town. Family is awesome.

Huggy Bear

I love my huggy bear. It was hard to give up sleeping with him every night, but I guess it was for the best. He still stays by my bed though. Last night he was with me again though. I figured Stephen wouldn't mind since I was in Henderson. I thought it was fitting to take him to Henderson, since that's where he was "born".

My grandmother gave me huggy bear on the day I was born, and he was so named because he fit perfectly over my back and it looked like he was hugging me. I could count on my hand the number of nights I slept without him in my entire lift before I got married. A few of those nights were before my freshman year of college, when I accidentally left him on my bed stuffed in a pillow. I realized I didn't have him on the plane to Utah, and I almost broke down. Dad had to overnight him to me. My parents have always been pretty supportive of how much I love that bear. Once we were half way home from grandma's house, late at night, and I realized I'd left him. Dad immediately got off the beltway and turned around to go get him, no questions asked. I might have been as old as 10.

Huggy bear has been there for me through absolutely everything. Honestly, I'm kind of surprised he hasn't fallen apart. He's not the kind of bear that can be "passed down". I'm pretty sure his playtime years are over, but I just can't bring myself to get rid of him. He was my best friend for a long long time, and I'm so glad.

Jeepy (aka Herbert the Love Jeep)

I love my jeep. Most of all, I love my parents for buying the jeep liberty to send to BYU with my sister and I. And I love my parents again for letting Stephen and I borrow the Jeep while the other kid drivers are on missions. It has been such a great blessing to us this year. Jeepy is a trooper. He's made it SEVEN times across the country. He endured more than a year with nothing to listen to but Enrique Iglesias, because the CD was stuck in the CD player. Say whatever you want about the CD being there in the first place, but when you are driving through Wyoming and there is no radio and you've already listened to everything else, Enrique starts to look pretty friendly. And ok, we still had the radio. Jeepy has gotten us countless times up to Provo to visit our friends. Today he is taking me to Henderson to see my mom and I'm so excited!!!!!!!

Short walks on cold nights

I'm not about to complain about it being cold in St. George, so don't get too excited. It's a bit frosty, yes, but nothing compared to the alternative. Tonight Stephen and I went on a short walk up to the Temple and back. We love that walk. It's the perfect distance, and there are benches on the grounds if we want to stay longer. Tonight we didn't. We just wanted to walk our dinners off a little and mostly just hold hands and enjoy each other. It was kind of refreshing to feel the cold on our fingers and faces. I know we won't always have a temple close enough for a short walk, but I hope that no matter where we live, we can always find a place for it. I love walking, and I love my husband! What could be better than both?

Potato Soup

Holy cow, that stuff is good. Yesterday was fast Sunday, and I was starving when we got home from church. Lucky for me, I had spent all morning chopping carrots, celery, potatoes and onions for the soup, which was all put together and ready before church even started. All I had to do was warm it up a little and wait for the McBrides. And make biscuits. This particular recipe is at least in its third generation in my family, and it has always been a high favorite. Jennie and Jared loved it, naturally. I've made it a handful of times, and I have to say that this was the best I've done so far. I've come a long way from the first time, when the potato chunks were still whole (you're supposed to mash them when they get soft) and I used two stalks of celery, not two sticks. I had just learned the technical difference, and the recipe said stalks. It was more like celery soup. But last night it was perfect, biscuits and all. And I was proud to share it. Soup is so awesome, because it's so full of tastiness, and all I have to do is put it together.

My phone

My phone isn't much in the way of awesome phones, but I didn't buy it to play games or take pictures (which it can do, but I don't know what to do with them once I take them) or write emails or keep my daily planner. I bought it to talk. Mostly with my family. Tonight I called home and my dad answered so I got to talk to him for a while, and let him know what's going on in my life, and then I got to talk to mom and tell her all the same things and then some. I don't know what I would do if I couldn't call home. I'm sure I'd write letters or something, and maybe not even know the difference, but I'm so glad I can just call whenever I want. My home phone is even on Verizon like I am. That being said, my mom just got an iphone, and I'm totally stoked to play with it when I see her in 3 days. It means the world to me that I have the ability to call my family and friends when I'm thinking of them. I miss them a lot sometimes.

My cold

Yes, today I'm thankful for my cold. What's that you say? I'm starting to sound a little crazy? Ok, fine, I'm not really thankful for my cold. I'm thankful for my husband again. He gives me special treatment every day, but when I have a cold I think maybe I appreciate it more. Tonight he made dinner (and even ate vegetables with me!) and now he's at the grocery store picking up a few things for dinner tomorrow. And some construction paper for our turkey of Thanksgiving! Pictures to come. I don't think I can make one quite as cute as "Thankful the turkey" was, but I can try. Anyway, back to my cold. It's not that bad this time, but I sound pretty bad. I breathe pretty bad. I look awful, but I still feel loved in the middle of it all. I did have to work today(heck, it's probably Bogie's fault that I'm sick in the first place) but other than that being sick is a good excuse for a good rest. And tomorrow is Fall Back to top it all off!

Our Apartment

It's hard to believe that we've already lived in this apartment for a year. It has served us well, and it really is perfect for the two of us. The kitchen is awesome, with plenty of storage which is important. Mostly I love that the kitchen and living room are so open, especially since we did some rearranging last week when we put up our pictures. It just feels so much more like home now, with that small personal touch of Stephen's beautiful photography. I won't lie, I was a little worried having to let Stephen choose a place for us all on his own. But he did well. I feel like we've even been a little spoiled this year. I'm not sure we'll have it so good once we're back in Provo. But for now, I'm thankful for our little home, and I'm enjoying my time in St. George while it lasts.

192. Slowly, but surely. Hopefully that makes it permanently. Of course I'm a little worried with the holidays coming up, but I get full so quickly these days that I think I'll be ok. There will be a few short stretches without Curves, but nothing to take me completely off track. I have another 12 lbs to go if I'm going to beat those next 20 by Christmas. It will be close. It's definitely time to stock up on veggies again, because even my giant bag of carrots is gone now. I wish I could keep them fresh longer. I may have to start freezing them. I was surprised that I didn't find any oranges at Cosco the other day. Isn't it about that time of year? Hopefully soon, because Stephen and I LOVE oranges. Wish me luck this week! My mom is flying in, and I'll be with her most of the week, and may only make it to Curves on Monday. I'm so excited though!

Music

I LOVE music. Lots of different kinds. Obviously there's a whole world full of choral music, which I love. But today what I'm thankful for is the almost magical quality that music has to change me. I get lonely a lot when I'm home during the day. And that often translates to a very non-productive Meagan. I'm not sure why, but I don't want to do ANYTHING when I'm feeling lonely, and especially not the dishes, laundry, etc. But if I pick something to listen to - whether it be classical, country, nostalgic, a musical, whatever - it changes me. The music itself can keep me company, give me energy, and just brighten my mood. Today I discovered that my dvd player does indeed play CDs, and those speakers have their issues but they are infinitely better than my computer speakers. So today I filled the house with MoTab christmas music, and now The Secret Garden. I LOVE the Secret Garden. That is definitely one good thing that came out of the 80s. haha. My grandparents are big fans of all things broadway and they introduced me to the musical long long ago. They even took me to see it in a community theatre, and I absolutely fell in love. I've never really liked any of the movie versions of the story, but the musical really moves me. I never get tired of it, and it always makes me happy.

Friends

I probably should not write this post right now, as I'm really sleepy and can't do much justice to my AMAZING friends. I'll try.

I don't count myself as a "popular" person, but my husband is always commenting on the sheer volume of good friends I have. I suppose there are a lot of them... I guess I've done a lot of things with a lot of different people. One good example of this is my very last birthday at BYU. Amelia and I both had birthdays that week, so we invited a bunch of friends to come to Red Robin for lunch. Holy cow. There were like 20 people that came. And they definitely did not all know each other. My sister Rebecca was there. There were friends from Bountiful Court. There were friends from Nauvoo. Friends from Jerusalem. My best friend from freshman year. Friends from women's chorus. That represents six different groups of friends, who wouldn't have mixed at all except that I was in the middle of it. It was kind of epic. Sadly, not one of my current room mates was there, but they all had good excuses.

A couple shout-outs. I shouldn't, because I have way too many friends who deserve shout outs. Maybe January will be shout out to my awesome friends month.

First, my husband. He is my best friend. We were friends first, good friends, and friends forever. I love hanging out with him. I love when he comes home. I'm pretty sure I'll always be happy to see him. He knows me best, and loves me more all the time. I don't know how he does it, but I love him more all the time too, so I guess it's just one of those things.

Two of my best girlfriends are both Amelias, and I can't even differentiate the elementary school way because they are both Amelia M! You might say that "Baltimore Amelia" got me through high school (or I got her through, it's kind of a mutual thing) and "BYU Amelia" got me through college. There could hardly be two girls more different than they are from each other, but I love them both a lot. On second thought... they really do need their own post.

Jen is another one of my cross-country friends :) But that doesn't stop us from talking like, every day! I so look forward to waking up in the morning because I know she's probably already awake, and online. We've been through a bunch of life changers, seemingly together because it was at the same time. We got engaged the same weekend, and married exactly 6 months apart. We were room mates for a year and a half, longer than any of my other room mates. And we're both east coasters, so that puts our bond on a whole new level :) I'm glad we have all this modern technology so that we can continue our awesome friendship even though we've both moved on to "better" room mates.

Like I said before. I have sooooo many friends who deserve shout outs. I really have been blessed with some of the best friends in the world. And I love them.

Aunt Rae

Happy Birthday to my GREAT Aunt Rae! Emphasis on "great", because she really, really is. And today I am thankful for her. Today I had to work, but just as I was finishing up, my phone rang and it was Aunt Rae! She was calling on her birthday to invite me to lunch for MY birthday. I'm so excited, and pretty much thrilled that I am cool enough to spend time with her during November... which is Jubilee of Trees month. Which means hardly anyone except Uncle Ted and her fellow hospital volunteers get to see her this month :) But I do!

When Stephen told me last year that he had gotten the job in St. George, I was ok with that because Aunt Rae and Uncle Ted are here. Otherwise, I'm pretty sure I would have been scared to death. Aunt Rae was there when I was born, she came to my baptism, she came to my wedding, and she's been part of my life countless times in between. She truly amazes me. She holds the 2nd highest number of lifetime volunteer hours at the Dixie Medical Center. The #1 lady is 91 years old, and still going strong. That's hard to beat. She's busier than anyone I know, and still has time to take care of Uncle Ted. I'm so glad she has been part of my life!

Not being last

I wasn't expecting to go into work today, but it happens. I got a call from my boss just before 10am saying that Bogie wasn't feeling well, and could I come finish up for him. I said sure, and he said "Good. Throw on your tennis shoes and come on in. There's a TON of mail." Well, it is monday. Luckily, Bogie had finished all the presorted letter stuff, and I just had to do magazines and packages. I was last to leave, but it was 12:30, and I was pretty confident in my ability to be back before 5. Just after 3, Doug called to see where I was, and showed up about 30 seconds later to take one of my trays, which saved me about half an hour. And I was back at 4:15. And I was not last. And some of my coworkers who usually make it back HOURS before I do had only just gotten there. And I felt pretty darn good about it. I'm a little competitive. Being last is lame. I might never be first, because it takes forever to case my route, but I'm thankful for not being last sometimes :)

Nursery

The whole ward keeps asking us if serving in Nursery has been natural birth control for us. We think that's really silly. No Way! Nursery is awesome! Of course there are cranky kids and spills and falls and really short attention spans, but it really is the best class around. Today we saw Hunter, who we don't see that often. And I'm pretty sure he's grown like a foot in the last couple months. Holy cow, that is one tall 3 year old. Anyway, he and Ava really hit it off, and they were having a great time playing kitchen together after Hunter gave up his "Danger place" built of legos. It was pretty elaborate. Hunter cooked a lizard in the oven, but every time Ava asked what he wanted to order, he only wanted chicken nuggets. When I asked for a cookie, or ice cream, Ava said it was all gone. Eventually, Ava heard me say his name, which she had not known, and she got really excited and started telling us about the other Hunter she knew, who was her neighbor. Except she kept calling him "the bad Hunter". Haha. She also got really excited when I told her a secret, that we were having popcorn for a snack. It was cute how long she tried to whisper about it.

Jacob, our usual happy one, was not too happy today. I think he was having tooth problems. He got pretty mad when he was tired of doing one thing, but we weren't sure what he wanted to do next. At one point I had to put the bubbles away because everyone was screaming really loud in excitement, and I told them they could only use inside voices with bubbles. Jacob really wanted to play with bubbles, so I told him he would have to ask his friends not to scream. He did, and it was pretty cute. What else is cute is the way he says Aldridge, perfectly, but almost not sure if that's a real word or not. 

I love these kids, and I'm so thankful I've gotten to spend this year with them. I have gotten kind of attached, and I'll be sad when the older ones leave for sunbeams. What a quiet class we'll have again!

A Real Saturday

It seems like my husband and I have lost our Saturdays far too often in these past few months. I have to work, or he has to work, and only sometimes do we both have to work. It's especially lame for the one who has to spend Saturday alone... which for me makes it like every other day of the week. But today was a real, blissful, Saturday. Stephen did go to the office for a couple hours, but not for long. I made waffles in the morning, we flipped through channels on tv, then moved around out living room furniture and put up all the pictures that Stephen gave me last week. Well, he put them up. I helped. A little. Then he went to the office and I picked up the living room and kitchen. He came home and I made a yummy dinner, he picked up a pumpkin and some candy, just in case we had any trick or treaters. He also got some dry ice, and after he gutted the pumpkin he filled it with water and dry ice... and it was really, really cool. We watched Pirates of the Caribbean (that's about as scary a movie as I can stand.. lol) then our friends Barbie and Ken came to admire our new decor for a few minutes. We even drove around town in the dark to take a time lapse on the Boulevard. It was a FUN Saturday. So today that's what I'm thankful for. The way Saturday should be.

Main Street

I know, that sounds like a silly thing to be thankful for, but it really does make my life better. When walking to Curves, Bluff Street is the most direct way to get there. The walk is about a mile and a half, but Bluff Street is very busy, and it smells like cars and trucks. Those fumes can't be good for you. It almost seems to negate the whole point of walking. Sometimes I still go that way, but I usually regret it. Only slightly longer, at 1.6 miles, is to walk down Main Street instead, which is a lot quieter, and I see few to none huge trucks blowing black smoke. I can see the temple pretty much my whole way home, and I can walk past my friend's house. I still wouldn't call it a pretty walk on most of that particular part of Main Street, but it's much better that Bluff, so I'm a fan. And I even get a few more steps for my pedometer :)

Friday #10

This morning, the number is 193.2. Not much different from last week, but it still feels like success. Ok, it feels like cheating, because I have kind of been eating junk this week. Cookies, dove chocolates after 9pm, the anniversary m&ms that finally got to come out of the freezer, french toast, muffins, that kind of thing. I've only been to curves 3 times this week, counting later today. And only walked twice. But hey, I got rid of another 1/2 pound! And you know what? That means that since I've started counting (before I started Curves) I've lost 30 pounds this year! Woohoo!

The other night we went to ask Bishop if we could borrow his truck, and we came home with like a dozen pomegranates picked from a tree by the house where he grew up. Yesterday, I discovered that getting the seeds out of them is not as difficult as it's cracked up to be (heh) so now we have a bowl of them. I don't especially like the taste, but they are kind of addicting, nonetheless. I like the crunch. Sister Smith gave me a recipe for pomegranate salsa, and I'm pretty sure that would be awesome. I may try that today.

Beautiful Christmas Music

Does it seem a little early to be thankful for Christmas music? I don't think so. I'm not talking about the unbelievingly cheesy music that ruins your favorite pop station starting November 1st. I'm talking about the really good stuff. The hymns, the classics, Handel's Messiah, you get the picture. I LOVE choral music all the time, but especially during the Christmas season. And lucky for me, being in a choir means that Christmas starts even before Halloween can squeeze in. In face, Heritage Choir started rehearsing for Christmas tonight.

I remember the first time my Christmas season began before October was over. I was in Nauvoo that fall, and couldn't think of a better place to spend Christmas. We weren't even there for Christmas, but we sure made up for it with all our Christmas activities that stretched out for a blissful month and a half before we left. Our choir met every day before dinner, and we worked so, so hard to memorize 11 or 12 songs. I memorized two more, as I had a solo, and a duet with my friend Sterling. AND I had a solo in the Messiah sing... the hardest solo I've ever had in my life. The spirit of Christmas literally filled the halls of the JSA as we each had a different song stuck in our head. Ok, so most of the time it was the same song... (Remember? "Down in the town of Bethlehem, into a world full of woe.... What a wonder what a joy!" Haha, now it's stuck in your head again). Anyway, Christmas music is connected with some of the best memories. Memories of home, memories of Women's chorus, memories of service. Memories of Nauvoo, and Jerusalem, and Bethlehem. So don't feel bad listening to your Christmas playlist so early. I think I'm going to make mine now.

The awesome parts of my job

Today I am thankful for my job. And when I say that, surprisingly I am not talking about the part where I get paid. I'm talking about the part where I encounter some really awesome people while I am delivering their mail. Example, today I had to deliver an Express, which is a rare occurrence on my route. They are not really a big deal, especially when I know I'll get them done easily before the 2pm deadline. But they make me a little nervous, just because I get in bigger trouble if I happen to mess up on them. This particular package went to a very sweet old man who answered the door holding a baby grandson. I was impressed that he could hold the baby and sign for his Express at the same time. It just made me smile. I asked his name so that I could print it for him under his signature, since I knew that would be easier. He told me I had such a beautiful smile, and a great attitude, and asked if anyone had ever told me that before. I assured him they had, and he gave me a pat on the cheek and wished me good day. It was so sweet. I love people who are not afraid to compliment strangers. That sweet old man totally made my day. I wrote in my application letter that I wanted to really contribute to the community, and I really feel like I do. "Oh the mailman is a person in your neighborhood!" haha. I love when people wave hello, or stand in their driveway so I can give them the mail and a smile. There are a lot of things about my job that do annoy me, when when it all comes down to it, I'm so thankful that I get to have this experience!

31 Days of Thankful!

So, counting today and November 25, there are exactly thirty one days from today to Thanksgiving! I know we haven't quite passed Halloween, but lets be honest, Halloween isn't much without the gobs of candy, which I will not be partaking this year. Maybe a little. Thanksgiving is a much more substantial and meaningful holiday, which I love, and I'm ready to celebrate!

One year when I was little, my mom drew a turkey on a huge piece of poster board, and cut out hundreds of feathers from construction paper. We called it the Turkey of Thanksgiving, and every day we wrote something we were thankful for on a colored feather, and taped it onto the turkey. Everyone who visited our house had to make a feather. That turkey was really something by the time Thanksgiving rolled around. I continued the tradition three of the Thanksgivings I was away at school, with my friends and room mates. I wish I had pictures. I wish I had the turkey that my room mate Amelia made, which was awesome. I even used it again the next year.

Today I am thankful for anniversaries. Is this a shameless excuse to brag about my husband even though you know I'll be thankful for him in more than one post, and perhaps all of them? Maybe. But I am thankful for the full day that is especially set apart for remembering the beginning of our eternal relationship, and wondering at all that has happened since then. Ours was Sunday, but we tend to stretch out these weekend celebrations. Saturday Stephen had to work, but when he came home he surprised me with a TON of his pictures all printed and framed. Most of them were taken on our Honeymoon. I LOVE them, mostly because they are not just beautiful pictures, but they mean something to us, even if they are not all pictures of us. I can't wait to put them up on our wall. Sunday morning I made french toast and hot chocolate, and set the table with the China dishes that my mom gave us for our wedding. I had a roast in the crock pot, and after church we brought it on our trip to Kolob, where our friend let us spend the night in his ranch house. The house was freezing, and there wasn't any dry wood for a fire (not that Stephen didn't spend hours trying) but the scenery was just gorgeous. Monday morning, we reluctantly got out of bed, the only warm place in the house, and had hot chocolate and muffins for breakfast. The morning was absolutely beautiful, and we took our time cleaning up and getting ready to leave. It wasn't long, but it was so nice to get away together, some place quiet, and just be together, with no distractions. I imagine the getting away together part will be more and more important as more distractions come our way, so I'm glad we've started that now.

I know, I know, where are the pictures of this beautiful place? Well, Stephen took them all. And there aren't any of us because we were too cold. I'll work on that, if I can find my thumb drive.

Friday #9?

I'm sorry I didn't post last week. Forgive my moment of weakness. I'm back and ready to share!

The count today is 193.8! That's a good feeling since I've kind of been feeling a little stuck these last couple weeks. This week, and last, I started walking to Curves. It's hard. harder than I thought it would be. Before I went to curves I was used to walking 3 or 4 or more miles a day, five days a week. So I figured 1.5 miles one way, no big deal! I tell you what, the next day it's a big deal. It hurts. But I've found it hurts less if I make sure to stretch when I get home, after all that walking, and not just after my workout when I still have half an hour of walking left. It's not the prettiest walk, like the ones I took before, but it feels good to do it, and hopefully it will be a good boost for my metabolism.

The last couple weeks there have been WAY too many home made caramel apples in my life. And in my stomach. But now that all of Jennie's caramel apple stuff is used up, I think I'm safe. There is still one on my counter meant for my husband, but I don't think he's going to eat it. It's so pretty though! Very hard to resist. I think I better make some of those banana muffins.

Pumpkin Trifle

Last week I got this email from Taste of Home with my "bonus" recipes for the month. The pumpkin trifle caught my eye, probably because it was so pretty and I was definitely feeling the fall recipe vibes. Oh, and because of the little red heart signifying a "healthy" dessert. I did my best, but I couldn't find all the healthy ingredients, so I improvised a little. I made it on Saturday night. On Sunday we shared it with the McBrides. Tonight we finally finished the last of it. Soooo. So. Yummy. I'm not a huge pumpkin pie fan. I love the taste of it, but the texture of the pumpkin filling gets to me for some reason. This is an amazing alternative. Here's the recipe...


Ingredients

  • 1 package (14-1/2 ounces) gingerbread cake mix
  • 1-1/4 cups water
  • 1 egg
  • 4 cups cold fat-free milk
  • 4 packages (1 ounce each) sugar-free instant butterscotch pudding mix
  • 1 can (15 ounces) solid-pack pumpkin
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon each ground ginger, nutmeg and allspice
  • 1 carton (12 ounces) frozen reduced-fat whipped topping, thawed
  • Directions
  • In a large bowl, combine the cake mix, water and egg, beat on low speed for 30 seconds. Beat on medium for 2 minutes. Pour into an ungreased 8-in. square baking pan.
  • Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. When completely cooled, crumble the cake. Set aside 1/4 cup crumbs for garnish.
  • In a large bowl, whisk milk and pudding mixes for 2 minutes or until slightly thickened. Let stand for 2 minutes or until soft-set. Stir in pumpkin and spices until well blended.
  • In a trifle bowl or 3-1/2-qt. glass serving bowl, layer a fourth of the cake crumbs, half of the pumpkin mixture, a fourth of the cake crumbs and half of the whipped topping. Repeat layers. Garnish with reserved cake crumbs. Serve immediately or refrigerate until serving. Yield: 18 servings.

Facebook Fast

I tend to feel bored a lot, even when I know there is plenty I could be doing. Ok, especially when there is plenty I could be doing. I often spend hours every day on facebook, playing tetris, or some other time consuming, time wasting game that will not ever make me a better person no matter how many levels I beat. And that makes me feel more bored, not less. Now, I love facebook. I have over 500 friends, and I enjoy hearing what they are up to, and seeing pictures of their friends and families. I enjoy sharing my pictures, and sharing my joys and successes with lots of people who care. But sometimes I know it's time for a break. Sometimes I just need to refocus my life, and the way I spend my time. I do lots of good things every day, but I can do even more. I bet I could even stay home all day (except for going to the gym) and never be bored. 

Today I'm starting my facebook fast. I've done this before, but this time it's for a whole month. Actually, a little longer. I'm not going to even look at facebook until my birthday on November 21st. That might mean that I blog a little more, but hopefully it won't mean that I find something equally time wasting to fill those daily hours with.

Remembering

I keep catching myself thinking about Jerusalem these past couple days. Yesterday I walked into the Bosch Kitchen store, and it smelled just like the Old City. That's pretty much the smell you get any time you have that many competing spices in one place. I'm sure I smelled it before I went to Israel, but now that smell and that place are inseparably connected in my mind. It's the same thing when I cook falafel, which obviously has a lot of spices.

Today I walked to Curves, which is about the same distance as walking from the Jerusalem Center to the Old City. I wore my colorful Jerusalem bag because it's the only purse I have that is hands free - good for walking. I thought about all the times I walked down the Mount of Olives into the Kidron Valley and back up to Damascus Gate, and still wish I had made that walk more often while I was there. Yesterday someone mentioned eating Talapia, and of course I thought of my St. Peter's fish at Ein Gev. The other day the ladies at Curves were talking about eating "safe food" while traveling, and I told them all about my experience in Egypt. I often wear my "What the Tell" tshirt when I work out, and always light up when anyone asks me about it. As soon as Halloween is over, I'm going to bring out my Nativity. If I can wait that long. I'm always looking for an excuse to go back to Jerusalem, and to bring Stephen with me because I want him to have that experience too. And I want to take MORE pictures. Because pictures are never enough.

Friday #7... on a Monday

This seems like a good time to look at the big picture. Mostly because I have the weight and measurement report from Curves right here in front of me, and I'm pretty proud of it, so I want to share. Since May, I have lost 21.5 lbs (and I had already lost three or four before I started Curves) and 16 inches overall. More importantly, my BMI started at 36.36, and is now at 32.78. I'm shooting for 25, but that's a pretty significant improvement towards a healthy body. Even if this year were over, to say I lost 25 pounds this year is pretty amazing, especially knowing I could do it again next year and feel even better about it.

I knew I'd gain last week because I had lost so much water the week before. But to be positive, I only gained one pound, even with that weekend trip up north. That's pretty good. That reminds me that I am in control, and that's pretty powerful.

Friday #6 - a short one before our weekend trip

So as I predicted last week, working 5 days in a row has definitely taken a toll on me. The current number is 195, but before you get too excited about that, remember that even a normal weekend would send that number back up a pound or two. My goal for this vacation weekend is not to let it get further than that. The low for this week was 194 when I got home from work yesterday. It was hot this week, very hot, and that's a lot of water my friends. I could be wrong. It might stay off if I do it right this weekend. I did drink lots of water out there, and didn't really get dehydrated at all. And I was moving constantly between 7am and 4pm. But I didn't go to Curves even once this week. They were long days at work, but that's another story. Hopefully today I'll get a decent walk around campus :) Yes, I FINALLY get to visit Provo again. And hear my Singers!!!!!

Friday #5

Well, this week has been another 1 pounder. I was hoping for something a little more exciting, but 1 lb is still good. Mostly I'm worried that because I'm working tomorrow, and Monday through Thursday, I'll get thrown off my groove again. I don't really eat when I'm working, but I do drink, that's for sure. But I also haven't been working out on the days I drive the mail truck. That might change this week because after I'm done working, I'm taking a little trip to Provo, and I probably won't work out while I'm there either. Lately I've learned that when my regular schedule gets thrown out the window, my progress is sabotaged. I feel like I'm only just barely getting back on track from last time this happened, but what can you do? Live and learn.

Also, I'm getting sick again. Same exactly as 2 weeks ago. I took airborne this morning (like I did 2 weeks ago) but my worst colds have always been post airborne. Granted, they are shorter. It's like the airborne condenses a week of the sniffles into a day and a half of absolute misery. But hello! I have to work tomorrow! Help?

Friday report #4

Like I said last week, my goal has been to maintain my current weight so that I know my metabolism is still working for me, and not against me. So, even though I haven't lost any weight this week, I count it as a success because I have actually stayed the same weight while trying to eat more, not less. And I got to feed my husband a homemade pizza, which he's been missing. Since that is true at the end of two weeks on "phase three" that means I'm good to start over with phase one, and keep on losing! So Sunday I begin again with a week of 1200 calorie days. If I get hungry, that means I'm doing it right. Maybe next week I'll think about posting pictures for further documentation.

This week I have really improved my water intake. I always drink about half a gallon when I'm working, but it's been a little harder when I'm home, because I haven't thought about it as much. So, I call that my "resting" water intake. It's just as important, if not more. The more I drink, the less my body feels the need to retain water, which is a good thing for weight loss as long as I keep hydrating.

In order to really be accountable, it's time for me to make another short term goal, since my first short term goal is almost complete. So here it is. I will lose another 20 lbs by Christmas. I know that is a safe goal, and I could probably dream a little bigger, but we'll start there.

Yummy treats!

As promised, I have been experimenting with recipes in my Healthy Cooking magazine. I couldn't pick a favorite. They are all really, really good.

Peanut butter-banana muffins
1c old-fashioned oats
1c whole wheat flour
1c all purpose flour
1/2c sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
3/4 c fat-free milk
1/2 c creamy peanut butter
1/3 c unsweetened applesauce
1/2 tsp vanilla extract
3/4 c miniature semisweet chocolate chips
Topping:
1/3 c packed brown sugar
1/3 c dry roasted peanuts, coarsely chopped
1/3 c miniature semisweet chocolate chips

1. In a large bowl combine the first seven ingredients. In a small bowl combine egg, milk, bananas, peanut butter, applesauce and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips.
2. Fill greased or paper-lined miniature muffin cups three-fourths full. In a small bowl, combine topping ingredients. Sprinkle over muffins. Bake at 350 for 10-13 minutes or until a toothpick inserted near center comes out clean.
3. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

Makes 4 dozen, or 2 if you make bigger muffins like I did. 


Home Made Granola
4 1/2 c old fashioned oats
1/3 c sliced almonds
1/4 c unsweetened apple juice
1/4 c maple syrup
1 Tbsp canola oil
2 tsp ground cinnamon
1/2 tsp salt
1/2 c flaked coconut, toasted
1/2 c raisins

Combine oats and almonds in a large bowl. 
In a small saucepan, combine apple juice, syrup, oil, cinnamon and salt. Cook and stir for 3-4 minutes over medium heat until heated through. Remove from heat. Pour over the oat mixture and stir to coat. 
Transfer to a 15x10 inch greased pan. Bake at 350 for 20-25 mins, stirring every 10 minutes. Cool completely on a wire rack.
Stir in coconut and raisins.
Serve with milk if desired.
Store in an airtight container.





(Potentially) Gluten-free Autumn Bread

1c mashed ripe bananas (2-3 medium bananas)
1c packed brown sugar
1/4 c unsweetened apple sauce
1/4 c canola oil
2 eggs
1 c sorghum flour
1 c brown rice flour
1 1/2 tps baking powder
1 tsp baking soda
1 tsp xanthan gum
1/2 tsp salt
1/2 tsp ground cinnamon
1 c shredded carrots
1/2 c raisins
1/3 c chopped walnuts

I didn't used walnuts, and instead of the sorghum and brown rice flours, I used 1c white and 1c wheat flour. And I didn't use the xanthan gum either. Seriously good bread. :)

Late again

Just pretend it's friday.

This week has been a little frustrating, because I know I'm supposed to be eating more, but it's really hard. I especially need help eating more protein. This morning when I stepped on the scale I was back to 200 (after being around 202 all week) which is good. I'm not really supposed to lose much weight for a couple weeks because I'm working on raising and then stabilizing my metabolism. So the goal is maintenance. I'm a little impatient, but if I follow the plan and prove to myself that it works, I maybe won't be so impatient in the future.

I'm all for trying new healthy/delicious recipes. This week I found a recipe for peanut butter banana chocolate chip muffins. I know that doesn't exactly sound healthy, but it was in the Healthy Cooking magazine. And I used half wheat flour. There's only a little bit of sugar. I think the main key is really to eat one at a time. Which I have gladly done because that means they last me longer. Wow, they are good. There's a fall harvest bread recipe in the same magazine that I'll be trying next. That and the home made granola. What are your favorite healthy recipes?

The Friday Report - A little late

I know I promised it would be on Fridays. But Friday was Stephen's birthday, and I really wasn't home much. Plus I've been kind of sick this week, and I had to work yesterday. Those are the excuses, now on to the fun!

Last week I mentioned my first pair of size 14s in... I don't even know how long. At least 10 years. But lets be honest, I still thought it was a fluke. That the Dressbarn was just one of those stores that made me feel good about myself. Not that it didn't already. Anyway, out of curiosity (and because they were having an awesome sale) I went to Kohls a couple days later. And came home with two pairs of jeans, that look and feel amazing. One was indeed a size 14. The other was a size 12 (EEP!) but I'm pretty sure there aren't many brands of jeans where the 12s are like that.

So then, I found myself at target looking for exercise pants (because it was a little early, and Ross was still closed). But once I was trying something on, I had to try on something cute too. I've always had a problem with pants at Target. They never fit. Until now. I tried on a pair of grey dress pants, and they looked amazing. Size 14. But I didn't buy them. I had to stop somewhere, because the way things are going, this revolution in my pant size is bound to happen again.

On a slightly frustrating note - the 200 lb mark is kicking my butt. Every day this week I've run circles around it (even saw a 198 on the scale!) but after being a little lower than 200, I keep going back to a little higher. I've been surprised at how unstable body weight actually is. Wednesday is my day to be weighed and measured at Curves, so my goal by then is still to be at the 200 mark, with my shoes on. It's been a few days since I've worked out because I've been sick. It's closed tomorrow, and Tuesday is going to be a LONG day at work. But I'm pretty sure I can make it.

Back to School

No, I'm not going back to school. Nor do I wish that I were going back to school, but I won't lie, I miss the adventure of the first few days. And I desperately want to go back to my Hebrew class. I just checked the schedule. It looks like my favorite Hebrew teacher finally gets to teach the 10am class, but she still has to teach the 8am class. That's the one I was in. I loved it so much that even though I had sworn off 8am classes after my first semester freshman year, I gave in for not one, but BOTH semesters of my 4th year at BYU. And I would do it again. If only I hadn't sold my $90 textbook for lunch money. I only got $19 for it.

And of course, there are the Singers. One more year, and I'm certain I would have been singing with them. It makes my heart ache a little still. I am certain that during my 5 years at BYU I attended at least 400 singers rehearsals. Possibly more like 500. And that's even factoring in my semester in Nauvoo, when obviously I didn't go at all. I arranged my schedule every semester to attend at many rehearsals as possible. It was maybe a slight obsession, but I LOVED them. Hearing their beautiful music was the perfect daily soul food for me. They got me through the best of times, and the worst of times. I miss them dreadfully, and I cannot wait to hear them again. Maybe in a few weeks.

Many of my best friends of those years at BYU have gone "forth to serve". But there are a few still there. It will be a sad day when I actually don't know anyone there. But that may never happen. I'm so glad for the memories that Provo gave me, even when I sometimes wished to be away from it. I hope it's not too long before I return for a visit.

Friday Report - The first of many

This is going to be hard for me, but I'm going to do it anyway. I'm not really at the beginning of my journey for a healthier me, but I have a feeling that blogging about it will make me more accountable. I have plenty of motivation, but more is always welcome. So, here it goes.

The beginning: At the end of January I made a start. I started walking every day. Usually I walked between 3-4 miles. It felt great, and I really looked forward to it. I started paying more attention to what I was eating and when. In March, we finally got a battery for our bathroom scale. That was bad news. 227? I couldn't believe it. Where had I started before all that walking? Had it helped at all? I kept going, a little more determined. But I needed more. I needed help from people smarter than I was.

Another beginning: The first week of May I went to Curves. I had been there before, but not consistently, and not for a long time. I weighed 218 on my first day at Curves, and was glad that walking had helped a little. I started going to work out every weekday, and I haven't looked back. Three months after my beginning at curves, I decided to start the Curves weight management plan - the first diet I've ever been on. It doesn't really feel like a diet though. It just tells me how much of what healthy things I should be eating every day, and I go from there. 1200 calories week one, 1500 weeks 2-4, then back up to 2000 for a couple weeks to make sure my metabolism is keeping up. Then it starts over. I'm on week three, but last week was a little crazy because I was working, and I don't eat much when I'm working.

Seeing results: My current weight is 200.6. I know there was a time in my life when I weighed less than 200, but to be honest I don't remember it. It was before high school. I'm hoping to pass that milestone before next week's weigh-in at Curves. Last sunday i wore my favorite dress to church. It fit me for my college graduation, then it didn't for a long time, and now it fits me better than it did when I got it. On Wednesday I bought my first pair of size 14 jeans, and they fit better than any jeans I've ever had. Yes, I was celebrating in the dressing room. Yesterday I wore the super cute pants that I ordered last summer, that didn't fit when they came. Those were my first goal pants. I've been trying them on periodically since this adventure started, and now they fit!

A long way to go: My long term goal when I first showed up at Curves was to lose 70 lbs. Holy cow, that sounds like a lot. But now that it's more like 50, it's starting to sound better. This is the first time in my life that I have consciously tried to lose weight, and the fact that it's working is really exciting. That keeps me going, even when the process feels so slow.

So, there is the first of many "Friday Reports". I promise they will be significantly shorter from now on.

Heritage Choir Tour

Last night our director announced the destination for the Southern Utah Heritage Choir tour in September 2011. Anyone want to guess where? Here are some clues...








No, those are not different pictures of the same city, even though I got a kick out of the fact that it kind of looks that way. The first picture is Helsinki, Finland. #2: Stockholm, Sweden. #3: Oslo, Norway. #4: Copenhagen, Denmark. And #5: Amsterdam, The Netherlands. Yeah, my choir is going to Scandinavia next year. Our director said he wanted to take us somewhere that wasn't toured by choir after choir after choir. Also he wanted to take us to places where there were temples nearby, since he figured that would mean we'd have people to gather an audience for us nearby. Ok, there isn't a temple in Oslo, but Brother Rigby still mentioned it. Seriously, how cool is that? I've waited my whole life to go on choir tour. Especially to Europe. Obviously, I can't get my hopes up too high, because there are lots of things that could happen in a year that might prevent me from going. But you can believe I am going to do everything I can to make it possible. We don't even know how much it will cost yet because we can't find out how much it would cost to get plane tickets until a year before, so next month. I almost cried when Brother Rigby told us. I'm trying hard not to get too excited, but it's difficult. Who wouldn't be excited about two of the best things the world has to offer? Choir tour and Europe? haha.

Perseids

Last night (well this morning) just after midnight Stephen and I headed out to Hurricane, UT to do some quality star gazing. It has been a long time since I saw a good meteor shower, and I was not disappointed. The Perseids promised to be amazing this year, especially since the moon set about the same time as the sun, so the sky was dark. There was still a little light pollution coming from Hurricane, but not enough to block an amazing view of the stars. Seriously, I don't think I have EVER seen stars like that. Growing up, I was way too close to the city. We stayed for almost 2 hours staring at the sky from the back of our jeep. I wish I had been counting, but I'm certain that I saw between 30-40 meteors. Some of them were absolutely brilliant. Stephen took some great photos, but we didn't catch any meteors in them. Couldn't figure out if the camera will do time lapse and long exposure at the same time. Here is a little of what we saw! Or really, what the camera saw, because I'm pretty sure it saw lots more stars than I did.
