I woke up this morning with a crazy craving for some pancakes I had at a restaurant in Fayetteville, NC. They had this amazing apple topping on them, and I really really liked them. But the only thing I could think of that would be remotely close to this amazing apple topping of awesomeness was apple pie filling. So what did I do? I diced a couple of apples and made my very own apple pie filling to put on top of my pancakes. I had to improvise a little, since usually apple pie filling becomes carmelized as the pie is baking in the oven. I had to kind of guess how to cook it on the stove. But it worked. mmmmmmmmmMMMmm. So good. And definitely not the sort of thing to eat more than once a year. In fact, Stephen said he'd probably never eat them again, which I thought was kind of harsh. But he said they were just too much sweet for his sweet tooth, and he can't believe I could take that much sweetness. Especially for breakfast. So there you have it. Deathly awesome apple pie pancakes. As good or better than my fabulous home baked apple pie.

3/4 Cup brown sugar
2 Tbsp flour
1/4 tsp nutmeg
1/2 tsp cinnamon
1/8 tsp salt
Coat apples with sugary goodness in saucepan (pot)
Stir in 2 Tbsp buttery goodness
Heat over low-medium heat until bubbly, cover and let simmer until apples are soft. That's the part where my expertise gets fuzzy. I don't really know how long it was simmering, and I was a little afraid I was burning it... burned sugar = no good smell. Or taste. heh.
